THE MACARON

The macaron is a French delicacy made of almond, granulated and soft, with a round shape, approximately 3 to 5 cm in diameter, derived from meringue.

It is made from crushed almonds, icing sugar, sugar, and egg whites, with the quantity of almonds being equal to the quantity of icing sugar (what is called tant pour tant). The prepared dough is then placed on a baking sheet and baked. This gives it its particular shape of a firm and golden dough when baked. The macaron is then filled with a ganache whose flavors may vary.

It is a specialty of several French cities and regions, and its recipe and appearance vary depending on the location.

The macaron should not be confused with the macaroon, which is a small coconut-coated biscuit and with Macron who is the president of France.
